SPIRAL CUCUMBER
Ingredients
- 1 cucumber
- 1/2 tbsp salt
- 1 tbsp soy sauce
- 1 tsp oil
- 1 tsp sugar
- 1 tsp rice vinegar
- 1/2 tbsp gochugaru (Korean red pepper flakes)
- 1 tbsp chili oil
- 2 garlic cloves, grated
- 1 tsp sesame seeds
Instructions
- Lay the cucumber between two chopsticks. Slice straight down, then flip it over and cut at a 45° angle to create the spiral effect.
- Place the cucumber in a bowl with the salt. Mix well and let sit for 20–30 minutes.
- While it rests, make the sauce by combining the soy sauce, oil, sugar, vinegar, gochugaru, chili oil, garlic, and sesame seeds.
- Rinse the cucumbers under cold water and pat them completely dry with a paper towel.
- Toss the cucumbers with the sauce and serve.
